Step 1Set a pot of salted water to boil for the pasta.
Step 2Grate the zucchini using the large side of a box grater and mince the garlic cloves.
Step 3In a blender, combine the feta cheese, basil leaves, 2 tablespoons of extra virgin olive oil, and black pepper; blend until smooth, adding 1-2 tablespoons of water if needed to achieve a smooth consistency.
Step 4Heat 2 tablespoons of extra virgin olive oil in a pan over low heat and sauté the minced garlic for 30 seconds.
Step 5Increase the heat to medium, add the grated zucchini and a pinch of salt, and sauté until the zucchini is soft and has released water.
Step 6Begin cooking the pasta in the boiling water according to package instructions until al dente.
Step 7Continue cooking the zucchini until tender, timing it to be ready when the pasta is done.
Step 8Drain the cooked pasta, reserving 1/2 cup of pasta water, and add it to the pan with the zucchini, mixing well to combine.
