2piecezucchini, sliced rounds
1piecered onion, cut into chunks
1piecered bell pepper, cut into chunks

2tbsplemon juice
2clovegarlic, minced

1tsprosemary
1cupGreek yogurt
1piececucumber, grated and drained
2tbspfresh mint, chopped

Instructions

In a large bowl, combine the beef cubes with olive oil, lemon juice, minced garlic, oregano, rosemary, salt, and pepper. Mix well to coat the beef evenly. Cover and marinate in the refrigerator for at least 1 hour.

While the beef is marinating, prepare the yogurt sauce by mixing Greek yogurt, grated and drained cucumber, chopped mint, and a pinch of salt in a bowl. Cover and refrigerate until ready to serve.

Preheat the grill to medium-high heat. Thread the marinated beef cubes, zucchini slices, red onion chunks, and red bell pepper chunks alternately onto skewers.
