1piececucumber, diced
1cupcherry tomatoes, halved
0.5piecered onion, thinly sliced
0.5cupkalamata olives, pitted
0.5cupcrumbled feta cheese
0.25cupfresh parsley, chopped
2tbspfresh mint, chopped
3tbspolive oil
2tbsplemon juice
1clovegarlic, minced

Instructions

In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper to create the dressing.

In a large bowl, combine the cooked and cooled quinoa, diced cucumber, halved cherry tomatoes, thinly sliced red onion, and pitted kalamata olives.

Pour the prepared dressing over the salad ingredients in the large bowl and toss well to combine.

Add the crumbled feta cheese, chopped fresh parsley, and chopped fresh mint to the salad, gently folding them in to distribute evenly.
