1cupcorn kernels (fresh or frozen)
1piecered bell pepper, diced
1piecegreen bell pepper, diced
0.5piecered onion, finely diced
0.25cupfresh cilantro, chopped
1piecejalapeño, seeded and minced
3tbsplime juice
3tbspolive oil
1tspcumin
1tspchili powder
1pieceavocado, diced (add just before serving)

Instructions

In a large bowl, combine the black beans, corn, red and green bell peppers, red onion, cilantro, and jalapeño.

In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper to create the vinaigrette.

Pour the vinaigrette over the bean and vegetable mixture, tossing well to ensure everything is evenly coated.
