200gtortelli (fresh, filled pasta of your choice – e.g., ricotta & spinach)
100gcherry tomatoes (halved)
1clovegarlic (minced)
1pieceburrata
150mlwater or cream (for a richer sauce)
1handfulfresh spinach
1tbspolive oil
1pinchdried thyme

Instructions

Preheat the oven to 220°C (fan) / 428°F (convection).

In a baking dish, combine the tortelli, cherry tomatoes, minced garlic, and spinach.

Drizzle with olive oil, season with salt, pepper, and thyme.

Pour in the water or cream to lightly coat the bottom (this will steam/cook the pasta).

Bake in the oven for 20–25 minutes, until the tortelli is tender and slightly golden.
